Mint tabouleh

Ingredients

  • 300 gr medium grain Couscous Salem
  • 3 tomatoes
  • 1⁄2 cucumber
  • 3 small white onions
  • 1 lemon
  • 3 tablespoons of olive oil
  • 3 sprigs of mint
  • 3 sprigs of flat parsley
  • Salt, pepper

Preparation

  • Prepare the couscous semolina as indicated on the Couscous Salem packet
  • Wash, remove the tomatoes, cut them into tiny cubes. Peel, remove the seeds and dice the cucumber into small pieces. Peel and chop the onions.
  • Squeeze the lemon juice.
  • Wash, crush and finely chop the herbs.
  • Mix the semolina with all the vegetables.
  • Drizzle with olive oil and lemon juice, add the mint and parsley leaves, then mix. Taste, adjust the seasoning.
  • Place in fridge 1 hour covered with food film before eating.
